Running Toyo RT Open Country tires at about 37psiNo, ABS is not a feature than can be deactivated. Are you running the OE tires at the recommended air pressure? If you stab the brake in snow in any vehicle you’re going to get ABS intervention. Mine handles the snow very well, if I drive normally ABS rarely even engages.

I don't think severe, just says M+S on the sidewallAre they rated for severe snow service like the BFG K02? If so, there will be a snowflake symbol on the tire sidewall.

ABS is engaging because you are hitting the brakes too hard, or your tires are complete trash.
If you get into abs, you are not braking properly. manual pedal modulation will ALWAYS be more efficient stopping then ABS.
