Do theses trucks have a separate TPS sensor?
Seems to me its in the throttle control area, senor lazy or possible worn throttle body plate.

Unfortunately it’s all one unit, I replaced the throttle body to double check and bc it had something rattling around in it anyway. But no changes.

Just a suggestion but do a hard re-learn. Disconnect both battery terminals then touch the + and - to clear everything from memory.
Re-connect and do the TPS relearn sequence. Google it, its a process i don't remember..lol

Are you running a stock airbox or CAI?
Use forscan to bump your idle speed up to 750 and see if that helps. I always increase my idle speed so the PS Pump doesn't labor so much at idle speeds (parking lots) with 37's

I did read a thread where someone had similar issues and it ended up being their ac clutch. Mine is pretty noisy, but I did not have the ac on when this happened.

Defrost will trigger the compressor also.

Fords typically run the A/C in all modes when it's above freezing- expect for floor only mode and vent only mode (with A/C button not lit/on). It's for humidity control.

Not sure how your 2011 is setup in that regard, you'd have to check each vent setting and see if the A/C kicks on.

If you let off the throttle and the A/C kicks on at the exact same time- I can see it nearly stalling. Especially with a noisy compressor that may be a larger drag than normal as well. You said your clutch is getting loud, the A/C clutch isn't what makes noise- it's either on or off. The compressor is what makes noise and if it's loud, it's getting hard to turn.

This is my first thought as well. The AC compressor being loud is concerning, I would remove the belt and make certain all the pulleys roll freely. Have the compressor checked for leaks and proper refrigerant and oil. Don’t want any of that locking up when on the freeway. Seen it many times on Subarus. Good luck, let us know what you find.
