I just did 5 back to back 0-70mph in 85°. Never went above 130°. I can say the brakes didn't like it. The engine temp never moved from its normal spot. Thats with the wagner IC and no tune.
I just drove 400+ miles over the weekend back and forth across central Texas in 95-100+ degree weather. With my 170 t-stat and Full Race IC, my engine temps never went above 195 and my IAT2 stayed pretty steady at 20+ degrees over ambient while I was driving. Speed limits in Texas are 75 MPH, so I was averaging 80-85 most of the time and yes, I have adjusted my tire size in the computer to match. Also, my A/C was running non-stop on Lo and recirculate, but I did have to lower the fan a couple of times because it was too cold.
IAT2 temps went up to 30-40 degrees over ambient while idling, but quickly dropped back down when the truck was moving again. I highly recommend a larger IC and a lower t-stat for lower overall temps.

I personally don't want to do the lower t-stat. I know these motors need to be warmer for optimum combustion and it just concerns me what type of potential issue could show up over time from that. That's just my opinion though.
I'm a believer in the better IC. I don't like the idea of it in front of the radiator so I think I'll look into who offers the best one in the factory location.
I heard the same thing about the engine temps being in the 180-190 range for optimum combustion. During my trip this weekend, I did the NGauge suction cup mount you suggested and I kept a watchful eye on the temps. My engine was averaging right in between 180 and 190 for most of the way.
I did have problems with the NGauge itself getting to hot in my windshield. It kept turning on/off when I would get back into the truck and it was very hot to the touch. I ended up taking it down and put it in my console every time I stopped so the sun was not blasting it. I will have to find a different location if I want to use it on a more permanent basis.
The Wagner IC is the largest one that mounts in the factory location. However, I read that it was not an easy install due to pipe routing issues, but I have not seen it for myself.
With my MPT 91PRX tune I was seeing engine temps hit upper 220s while accelerating up a small mountain or just semi aggressive acceleration runs even on flat. I'm running the stock IC.
Also while driving on the highway at 65 - 70 MPH with no boost I am seeing 35 degrees diff from ambient to IAT2
The highest temp i could get was 232° and thats was running up to the limiter to do it. At idle it was 200-205°. The other aggressive driving never went above 220°. The only fitment issue with the wagner is minor rubbing of the grill shutters on the IC. Just took a little grinding on the bottom of the center of the shutter and thats it. Pipes fit fine. Is there a shop out your way that did the forscan changes? Want to do a few changes also.
With stock tune that doesn't sound far off from what the PRX91 with factory IC did as far as engine temp. I'm sure an upgraded IC has got to be a help.
I did the Forscan changes myself. Not that computer savvy but followed the directions closely and it was pretty simple.
If you want to drive out here some time I'll make the changes for you.
