I just had it “changed” but I feel like the other shop said they did it but didn’t. Shame.

Ok I did mine twice...... why...... for this reason. The fluid you can't get out. I put a big pan on changed the filter added 15 qt drove it for a week drained it.. it was still a little dark. no filter change in the second. It has been 5 -8k now. I might do it again. looked pretty good after the second.
When you do a filter and fluid at best you put 50% new 50% old. (stock pan) if you do it again you get 75% newer 25% old. one more time you get the picture. 87.5% 12.5% I am sure there is a point of diminishing returns. not sure where that is or when.

It doesn't take long for new fluid to change color. Totally normal for mercon lv, it is a characteristic of that particular fluid.
There certainly is benefit to doing a couple changes if it has never been done, and your over 100k.
The fluid will always change color though.
