Tonight's findings:
1. Projectors :
The morimoto Mini H1 7.0 projector is undeniably incredible. The cutoff is sharp, wide and colorful. To mount them, all I'm going to have l do is draw on a 1/32" sheet of aluminum and cut out a few spots as well as drill some holes in it. Fine adjustments will be done by making slotted mounting holes for the projector to move around in.
2. U-Bar switchback leds
Boy oh boy did I luck out on this one. I was worried about fitment, illumination of the U-Bars and a having room for the LED drivers. Here's what I found
-Fitment
I lucked out with fitment. I was going to do a bracket system but it turns out that I'll be able to use a bit of putty adhesive to mount them on top of the U-Bars. Making brackets would have taken hours. Luckily, there is more than enough room for the brackets and the LED array is basically the same size as the top of the U-Bar
-Illumination

I'm almost certain they're brighter than they were straight from anzo.
-LED drivers
The LED drivers looked big in their pictures. Well, they're about 1 4/5" lobg by 1'" wide and only 1/2" tall. I'll be able to mount them side by side within the housing of the headlight.
Everything went better than expected!!!
