I say "GT" build. I would say coyote build - as they are the most common V8 swap, but... none of those builds will be more reliable (in practice) or require less attention per mile than a built 3.5.

I think the path of least resistance is going to be the RMB long block, big hair dryers, etc. You will not have as much drama making this work with the truck as stuffing a completely different powertrain in it.

Would a built 7.3 work? Sure, but at what cost as opposed to the built 3.5tt.

If you were rocking a Jen Juan, 7.3 all day long. Twice on Sundays.

It would be too fragile. Couldn't handle the weight if the rig.

Not necessarily, 3.5 is plenty stout enough to handle big power and the weight of the truck. Point taken though, getting it to be as free revving and the drivability of it would be a challenge.
