Do you guys air down offroad? What PSI for stock tires?

A small cut is really not an issue in a really good off road tire, like the BFGs. Also the KO2s on the Raptor are C range, which means their sidewalls are more pliable and again, in my opinion, less likely to get cut. Those people who put D & E range tires on the Raptor are not making their off road ability any better.
D & E rated tires or running 20'' wheels changes everything.

Saw on a jeep forum a guy had a tee and 2 hoses. Aired down 2 tires at a time.

There’s other options out there besides that one.

So is there a practical way to idiot proof the re-inflation - like a bleed off connector for the air compressor?

That is what I was talking about Smurf. A hose to each rear wheel to a central point. A 2 inch round gauge with a ball valve . That way you open and close ball valve to inflate and deflate tires. Closed takes a reading and open puts air in and takes air out. I would trust it more than a 5 dollar piece of Chinese brass

That compressor has a digital readout it shuts off ar. And a 12 v cord if battery is dead

Dixie 4 Wheel drive sells a 4 tire inflator/deflator and there is another one that is permanently installed at each wheel well, and you just hook small short hoses to each wheel. I have a friend that has had both systems. He likes it, but in almost all cases, it takes longer for him to inflate and deflate than me. We have the same size tires, but he spends a bunch of time hooking and unhooking everything. Looks good on paper, but it really doesn't work well.

I’m not sure I’d trust a gauge on a compressor. The viair compressor I got works adequately, but the gauge is kind of a suggestion.

hmm... I wonder if I could make a “T” harness, with a deflator set to ~37 psi. I’m not sure this would do, as I suspect it would be constantly bleeding off pressure -while- filling the tire, and would probably make it take impractically long.

Your compressor is putting out pressure way higher than 37, so the deflator would be popping off constantly. I have tried to fill a tire with a compressor set to the pressure I wanted, but since now you are filling with "low" pressure air (like 37 pounds if you want to go to 37), it takes forever to fill the tire.
