Anyone know of a step by step guide of removing the coilover springs? I kind of get the idea of what I may need to do by looking at it, but my knowledge is limited when it comes to suspension work and I don't want to miss anything.

It is relatively easy. First, they are called McPherson struts so if you are looking for a how to video or thinking about renting the tool, search for McPherson strut removal, not coil spring removal.
How To Replace MacPherson Struts
The McPherson strut removal tool can be rented for free at most auto parts stores.

I learned the hard way. I rented the coil spring compressor, which slides up ínside the coil springs. I figured out the mistake before starting the project and had to go back and get the right tool. When you say coilover springs everyone knows what you mean.

Then remove shock/strut assy, and get the strut tool and remove, some how mark the timing of wedge lates and to to bottom bolt orientaion for close. Paint may not last long depending on your use street/offroad. I would powdercoat
What color you doing them???
Use recomended torque specks which is like 403 foot lbs for bottom shock bolt or some crazy number:ROFLJest:
