I am 6’3 and the wife is 5’2 and she says the HUD keeps resetting and she has to adjust so see can see it. lol

Even more curious as to how mine keeps position, but instead lowers the brightness down to the lowest setting every single time I start the truck.

Is it possible it’s adjusting the brightness to the interior light sensor? AKA, does it do it when you’re starting the truck and it’s dark outside?

It's tied to the saved seat setting.

Yep!!! Just like your seat position.

I hope not, as that's a whole other can of worms: when I drive away from the sun during the daytime, my interior dims down to like -20%, and turns my headlights on.
