I think most people forget that the Raptor was purpose built to be an off road beast. 500, 600, 700 hp isn't necessary in this truck because it would be useless in dirt, on rocks, in snow/mud. Ford engineers tuned this truck to do exactly what it's supposed to do. These are not purpose built for the street. If it was, they wouldn't have put those big heavy tires, suspension, etc on it. For those looking for a fast street truck, the Raptor isn't it.
The basic gen 1 3.5 Ecoboost is offered in several vehicles, the Taurus SHO, Lincoln MkT, Ford Explorer, Ford Flex, F-150, etc. The Gne 2 3.5 Ecoboost HO is now offered in the Raptor and GT, and also the Ford Expedition, F-150 Limited, and the Lincoln Navigator.
SO yes, the 3.5, in both flavors, are still widely available.
As to the GT500 motor in a Raptor, I would not be surprised, but only as a special edition, in limited numbers. Not as a option to most Raptor builds.
I really think if Ford was going to put a V-8 back in the Raptor as a regular thing it would end up being a 4'ish liter Ecoboost V-8. Yes, I know they do not have such a motor now, but I would not be surprised to see one coming.

As for Jeep, you cannot buy a slower, louder, poorer handling, and more unreliable vehicle than a Wrangler.
These vehicles don't exist anymore - except the navigator/expedition.
F150/Navigator/Expedition are all that are left using this 3.5 ecoboost. This engine is being phased out. The other vehicles are either all cancelled or got a different engine.
