I did not monitor fans so I can't give you anything on that. I can't imagine them opening when the shutters are closed or when there is decent speed going on. I didn't really notice a difference with ambient temps

I just finished doing phasers on a truck today. Even if they look at the truck and confirm the noise, good luck getting parts. It took over a month of that truck sitting in the lot before parts showed up.

Heat up the coupler to soften around the sensor (heat gun works well) and it will separate. There's enough slack in the harness to move the sensor.

The bolts that hold the turbo to the manifold like to seize in from the factory. Sometimes heat helps, sometimes it doesn't. I've had a couple snap the bolt or pull the threads out. These have all been on gen1 Ecoboost motors, haven't done a turbo on a gen2 motor yet, but it's the same setup
If you ever get the joy of tearing down one of these motors you'll find out there is no actual dipstick tube. The stick goes through the head into the pan. I follows the same path as the oil drain. Best bet is to let it sit for a while other wise you wind up catching oil as it drops back down...
Out of curiosity, how high does the oil temp get on yours? I have an 18 that doesn't have all the gauges and am planning on installing some autometer units. Just want to see what scale I should get
