Wheel weights knocked off after new rotors/pads

Unless the pads are the wrong "height" and that will force it out. But then you would be cross threading the caliper mounting bolts

So, went out and drove about 10-12 miles. Nothing feels bad. I can't hear or feel anything grinding. The dab of paint remains untouched on that wear-line from the picture. All of the rest of my weights are still there. Nothing looks any different. I'm really starting to think that yes, the caliper is out slightly farther due to the new pads and if the wheels weights aren't TOTALLY flush to the outside, it's enough to clip them, as it did - mashing them into the other weights and the wheel a bit as they got pinched between the caliper and wheel.

I'm not sure what you mean. The pads seemed identical in dimensions to the stock pads when I held them up together (except for the new pads being thicker). They lined up and fit perfectly in the slots. The caliper bolts haven't put up any fight at all, even torqued right back down comfortably to the factory paint lines.

I meant if they were taller, measuring from the center of the hub outwards it's the only way they would push the caliper out from the center line

And they're definitely taller that way, since they are new. I can't use the old ones to compare since they have 25K miles on them. I suspect they are JUST enough to push it out farther than when the OEM ones were new. We're talking millimeters. I guess I'd be curious to see how close those inner wheel weights are to the caliper on other folks trucks' - especially the driver's side. I don't know why, but the passenger's side seems to have a slight amount more clearance (again, maybe a millimeter or two)

I put on ebc green stuff, and have all kinds of clearance, no issues here.

Measured the new vs old rotors - they're identical

The distance from the inside edge of the mount to the left edges of the caliper looks greater than PropDr's pic.

Ok, figured out one stupid thing I've done. I think I had the pads wrong (wasn't paying enough attention). In the picture you see the stock pads on the bottom left. The one with the two circles is obviously the inboard pad where the pistons are. I had the two on the right hand side installed on the driver's side. My assumption is that both of those should be inboard since they have the circle area for the piston. You can see I had the top left installed inboard (on the passenger side). I can't see how this could create the issue I'm having, however it's wrong for sure. I find it strange that the metal lining on the outside of the new ones doesn't extend up into that semi-circle area like the stock pads do. Do I have my arrangement correct? The top two should be on one side with the semi-circle ones inboard.

What Chris said. It looks like the pads sit deeper into the calipers. It also looks like there is space at the 5 o clock position on yours. I can't get side by side pics on this iPad damit.
