Detail Spray and other liquid products will freeze. Some can be damaged to the point of reduced effectiveness, but most of the time will be OK. The bigger worry is if it freezes the bottle might break and make a mess.

I usually have some products in the truck, like Waterless Wash for getting bird-bombs off, but I will take them out when it is below freezing.
