I don't see the Mustang on the same level as the Vette. They are to completely different classes of cars.My father had a Z06 and the quality was junk, skip the ZR1, everything has caught up to it, no longer as cool. Now if you are 45+ and have lots of gold jewelry then maybe a corvette would be a better option.
I got rid of my 2012 GT500 just after I got the Raptor and I haven't missed it one second, the Raptor is just that enjoyable. Go with option number 2.

If there's no hurry, a good Raptor broker could get the max trade value on an first year model. The 2012 models might give more room for performance upgrades; like the Whipple 2.9 supercharger.

I wasn't comparing the GT500 to the ZR1. I wouldn't class them the same either. The Shelby is a muscle/pony car, built for the straight line, and currently of much higher build quality than the C6. The ZR1 is a sports car, it's light, fast, and meant to handle.
I have a lot of seat time in the C5, and C6 corvette's including the Z06 and ZR1 models, both stock and modified and the Corvette's quality is almost laughable in all of them. They fall apart and over heat. If you don't believe me why don't you call the guys at Bondurant and ask them how their fleet of Grand Sport's, Z06's, and the ZR1 are holding up after a short 3K miles.
I am just forewarning you as I would hate to see you spend that kind of money on one and give up your Raptor as well in order to do so. Ultimately it's your money, but hey you asked for our opinion so I am just giving you my 2 cents. Best of luck with your decision.

Any driving school cars are going to be rough. Honestly my budget if I go overseas stops at the ZR1. I don't know of many other cars with that level over performance at that price. I have a hard time justifying paying the same price for a 6 year FGT when I can get a new ZR1 but I guess it doesn't matter because either way an ungraded Whipple would be going on either one.I don't see the Mustang on the same level as the Vette. Hey thanks for letting me know your back in the states you're not that far some pretty nice ORV areas. Ive been looking for some people to go up there with. I'm kind of sick of Jeeps.
