Keep in mind that what ever map app you use, still depends heavily on the use of Cell phone towers/repeaters. No Cell phone tower/repeater, no maps.

We use Motion-X GPS HD. You can download TOPO maps before you head out somewhere, and it can import GPX files so you can pre-plan your route. If you have a 3G iPad, the built in GPS will work fine out in the boonies, no cell signal required, but if you have a Wi-Fi only iPad, you'll have to get an external GPS antenna to do your remote navigating.

offline topo.
No service, no problem.
Download the maps in the area you are going to while at home.
Then use them like a boss, and high five yourself for a job well done.
