rear 5 link suspension is the most significant update, especially if you off-road.

Other than that, the upgraded tech displays and exhaust modes would be next (subjective)
Rest of the truck is pretty much the same as the Gen2 in terms of performance and features. Gen3 seems to have a better "tune" from the factory and the 3.5 ecoboost makes more power and tq in stock form

2023 Raptor does not have a front axel torsen - You get the electronic breaking system instead. Not a deal breaker IMO.

I owned a 2018 metallic. Loved it. Upgraded to a 2021 35. Loved it more. Upgraded to a 22 37. Love it best. In every case for my use the change was an upgrade that I enjoyed and utilized its capabilities more. If you do ANY high/moderate speed off-roading you will immediatly notice the rear 5 link is so much more stable. The back end is so much more planted. This IMO is the single greatest/most important difference between the G2 and the G3. Those who minimize the change simply have not pushed these trucks offroad for any considerable time. As noted above, the factory tune is a bit more crisp. Its noticeable, but not THAT big of a game changer. IMO the G2 was better at high speed (80+ MPH highway cornering). In that arena the 5 link gives a little more and does not feel as stable (not scary loose, but definitely a difference). Im in the minority and I MUCH prefer the look of the G3. From the side I always thought the front of the G2 had a more pointy/wonky profile. G3 did away with that and looks more symmetrical to me. I also am not a fan of the body color wrapped around the headlights. Luckily in the Metallic it was minimized. 99.99% of Raptor owners dont know/care if they have torsen. If you do and care then there you go. All depends on what floats your boat. If finances are a concern stick with the G2. I dont think an individual that is going to be stressing the cost to upgrade will think the upgrades are worth it. G2 is a really fantastic truck that was dialed in.

In addition to the much better exhaust note and rear suspension, I'll add the following. Mind you, these are for a '21. I believe some stuff is missing on the '23.

Wireless Carplay
Actual weather temperature readings on the infotainment screen whether using carplay or not. Temp also shows on the gauge screen
Ability to turn off heated steering wheel without using the infotainment screen
More Fordpass features
AC outlet in the bed
Adaptive headlights
Smoother shifting (Especially in sport mode)
More power. Not advertised, but definitely feels that way
Front parking sensors / more exterior camera views
Higher payload capacity
Damper adjustment on steering wheel
USB C outlets
Fold down shifter with flat workspace
Nifty second glovebox above the normal glovebox (daughter likes to make a snack pantry out of it)
Factory fog/driving lights (Admittedly not the brightest, but still come standard)
Last but not least, as you approach your Gen3, it turns on all kinds of lights to welcome you....if you choose to turn on that option.
