So, is it possible to loose that coolant over 60k miles and 3.5 years without ever adding any? Upon initial inspection, I did’t see any sign of leakage.

It can be hard to tell because it's obviously not a big leak since you haven't noticed it until recently and probably only does it when it's hot. Is it better now after topping it off? If so, just monitor it and see if continues to drop. Like I mentioned before, the only common leaks I've heard are from the overflow tank fitting or at the water pump itself. Previous Ecoboosts also leaked at the turbos, but I haven't seen that much in the Gen2

Hey all- found another thread on this, but the OP had the issue in the heat, so here goes. All of a sudden, the cooling fans have been coming on high for no apparent reason. I’m talking 70 out, just cruising around town, as I always have. They are LOUD! It doesn’t seem to matter if the a/c is on or not. Any initial thoughts as to what this could be? It’s new behavior at, around 60k miles, which is why I’m concerned. By the way, they don’t come on right at startup. It does it when it gets up to operating temp. And the temp is normal.

So, I have experienced this exact same problem with my 2017. Loud as engine fan all the time even in cool conditions. Truck is under warranty and the dealer refused to recognize the issue. I've since switched dealerships, fyi. Ultimately I purchased a 170 F thermostat and replaced the stock thermostat and the fans have not come on since. DONE. I bought the SPD thermostat.
