Why do I have so many interior rattles and noises on my 2013 the whole inside feels like it’s falling apart, cheap plastic junk.

Because it's a Ford truck, not a Benz, etc & that's what happens after several offroading excursions (or hopping over curbs at your local Starbucks, trust me I know - or know a guy on the Internet who knows a friend of a friend that knows).

No rattles in my '14. Everything is tight. If not plastic, what should it be?

2014 with 50K and its still as tight as a ...... LOL...well, as a new truck...
If yours rattles just turn up the Stereo....
and enjoy the ride...
My 12 is rattle free.... Occasionally I'll hear a door latch when thrashing it over bumps.
My ‘12 is rattle free, however the awesome MBRP dump exhaust rattles are the cars and trucks around me LOL!!

Okay so I cleaned the truck out mostly tools since I work on a farm and I guess they were banging around in the truck it’s much better now2014 with 50K and its still as tight as a ...... LOL...well, as a new truck...
If yours rattles just turn up the Stereo....
I was just going to suggest that, I found all kinds of shit rolling and rattling around my (used) '13 when I bought it; the worst offenders were a 1/2" black steel nipple under the tool cubby (on bare metal), jack was missing both wingbolts to secure it, paperclips/change under the sub, an entire shattered back glass under/around the backseat carpet, and a few live 9mm rounds under the door scuff plates and console. People are idiots.
if you do any type of offloading, you flex the vehicle, and cause gaps to start rubbing where they were tight. The brand new gen 2 raptors at the assault school, had less then 2,*** miles on them, and they were full of rattles, simply because they lead a hard life.
