Can anyone help me with ride height?

Still don’t understand why people measure ride height this way, proper way is center of axle hub to to bottom of fender arch

Never was educated on the proper way to measure height. I had seen several guys measure from the ground, so that is what I did. My stock 2019 SCREW with full tank of gas and with about 7,800 miles:
Driver Front 40.5
Passenger Front 40.5
Driver Rear 41.75
Passenger Rear 41.5

It's harder to measure to the center of the hub, easy to measure from the ground. So long as the tires are the same pressure, it will be more accurate side to side. If you measure front and rear from the ground with the tire pressures you like to run, you're getting the information you need, ie how much rake is present. Measuring to the center of the hub won't give you that information because the rake depends partly on tire pressure, which changes the distance from the center of the hub to the ground.
