How do you build a cage properly without chopping the roof off and stripping the interior out completely? That would be a big job

I don't know, maybe some kind pre-fab kit like for your typical street car. You just slide some bars together and weld or bolt them to the floor/frame? It probably want pass a Baja inspection but it would probably work for the average hobbyist offroader.

Actually it's done fairly often!

Above is from www.rockhard4x4.com - makers of some fine looking products

And this from www.4wheeloffroad.com -

Below:
Bolt-in rollcages like this sport cage from Rockhard 4x4 (www.rockhard4x4parts.com) offer good protection and are relatively easy to install. The company's cages utilize the factory Jeep rollbar but add rigidity and strength to it. The 1/2-inch-thick clamps not only hold everything together securely, but they look cool too. For maximum safety and protection, make sure any rollcage you decide to use is securely welded or bolted to the frame of the vehicle.[/QUOTE]

With an installation like this you could even get an oh-****-handle where you wanted it

I got one of dem dere things in my Jeep. I'd call it a 'sport' cage not a real roll-cage in the racing sense.

That's not a cage worth having in your truck if your planning on going faster than 15 mph. That's a 5K lbs metal dagger waiting to pierce your skin and kill you
I dont have any pics of cage's with stock interior right now, I've seen many in the past, but thats not something that I usually keep, but if I do come across any I will post them for you guys. In the mean time, here are a few cage's with aftermarket interior's
