It’s best to follow the manual. But sometimes in there there’s a basic specification and advisements for heavier use.I'd be careful running a higher viscosity in these motors. There were people spinning bearings in BMWs using too high of a viscosity - oil channels were so thin/small and the oil was not lubricating properly. I see no reason not to use 5w30 if that is what is recommended. Plus, knowing ford they will void your warranty if something happens and they find out you used the wrong weight oil.
If Ford doesn’t recommend it I’m not doing it. But if you’re modified past specs then you need to make your own judgement.
