Adding more oil will not keep your trans cooler. The only thing that will help cool is a separate cooler. A 10 qt pan will get to the same temp as a 30 qt pan it will just take more time but will still reach the same temp.

Sounds like unmetered air getting in. Check the intake system looking for loose clamp. Do you have a aftermarket air intake system?
