I second the Park City idea . I stayed there 3 days. I even drove to the raptor school from there. Only about an hour.
The prob with an early flight is you can't determine when the group gets back. You can't leave ahead of the rest of the trucks.

Red Iguana (Mex) is right down the street from the Airport and probably the best restaurant in SLC. Downtown is pretty cool, Park City is a little bit of a haul and you never know what Parley’s Canyon will be like if you’re going early spring. SLC airport has a major renovation going on which sometimes delays flights.
