Just an update, the only solution I've found is using AppOps xposed module which of course requires you to have a rooted phone and you need to be running 4.3 or higher. Once you installed the AppOps module you can go into the Bluetooth section and disable all the access to SMS. This allows the truck to still access the phone book and phone for making and receiving calls but blocks message access. The phone still shows the truck is requesting access but it's just blocking it at a low level.
Not really a big deal to set up and use for an experienced Android user, but not really a great experience for someone using a stock Android phone. Hopefully Ford will add back in the option to disable MAP in the SYNC software.
