Industrial strength plastic wrap... Several wraps around the entire truck. Screw-on chrome tail pipe... Adds 1/2 hp.
Golf ball in the frame rail... Will drive him nuts for months until he figures out what is making the racket.
If you can find an "admin" key, you could restrict some features like he was a teenager...

back in the day the fair had a booth where you could get Very authentic appearing license plates. This was in the 80s so what was more perfect than Gay Is Butiful? He was a school teacher, took him 3 weeks to see it. Had it on the front of his truck.

I always like the tie wraps on the drive shaft trick. Just get a couple of long tie wraps and tie them tight, won't notice anything until he is driving, highway speeds will drive him nuts.
