I would think that they would use the gwvr. When I googled Gen 1 towing capabilities, people were saying insurance would not cover you in an accident.
I think insurance would still pay on overweight. Insurance covers negligence, ignorance and accidents.

Hook the TT and head to a CAT scale. Cheap and you will know the weights for YOUR situation. Will give you all the weights you need

I'm pretty sure tongue weight is included in the GVWR and payload weights, which is not reflected in this chart.

well crap...... i really appreciate that calculator. but eff me. according to that calculator my truck needs to drive itself. says im 150lbs over capacity. i weigh 150lbs. everything will be empty because our other truck will carry all the rest of the stuff, but damn. 150lbs......

Payload will be your first issue. If the tongue weight of your trailer is say 800#, that only leaves you with 400# of passengers and gear available before you're over.

Um, no. 800lb on the hitch puts 900+ on the rear axle. Maybe as much as a 1000, depending on the geometry of the hitch. Other weight in the cab puts even more weight on the rear axle. I'll bet dollars to donuts that you're going to go way over the maximum load on the rear axle. Maximum payload cannot be placed randomly. Like most maximum specs, an engineer came up with the highest possible number assuming that a genius with a scale loads the vehicle. There are three important numbers on your doorplate. Maximum load, maximum load on the front axle, and maximum load on the rear axle. You have to be under all three in order to have any margin of safety.
