What tools and sockets does everyone carry daily? I'm trying to figure out what are the best things to keep on board without going overboard.

Very little. A few screwdrivers, vise grips, a socket that fits the lug nuts and a breaker bar. The most important tool to have handy around town is a cell phone.

I roll these up in a Carhartt tool roll and keep it behind the back seat:

3/8" ratchet
3/8" sockets - 6-19mm, 9/16", and 11/16"
Socket extensions - 3/8" drive, 3" and 6"
Socket adapter - 3/8" to Hex
3/8" U-joint
Screwdrivers - ratcheting multi-bit in regular and stubby
Multi-bit set To include: Phillips PH1-3; Slotted SL3, 5, and 7mm; Hex 2.5, 3, 4, 5, and 6mm; Hex 3/32, 1/8, 5/32, 3/16, 7/32, and 1/4-in.; Torx T10, T15, T20, T25, T27, and T30; Square S1-3, and Nut Drivers 4, 5, and 5.5mm and 1/4, 11/32, 3/8 and 1/2-in.
Hex extensions - 2" and 6"
Hex adapter - Hex to 3/8"
Pliers - slip-joint, needlenose, 10" channel lock, 8" vise grips
Wrenches - 8" adjustable, 10" locking adjustable
Fuses - both mini and standard 2.5-40A, cartridge 20-60A
Utility knife
Telescoping magnet
Flashlight - spot/scene, LED, waterproof, USB rechargeable Harbor freight
Extendable mirror
Zip ties HYCC 11" metal, Strong Ties Altai-1 nylon
