No, actually, I wont. Start/stop not as intrusive as I expected it to be, just pointless; no meaningful benefits plus additional unnecessary wear & tear, complexity.

If it didn't make noticeable changes to fuel economy (spoiler alert: it does, I can maintain 17 mpg in stop and go traffic) they wouldn't add it. As for added wear and tear, the starting components are all beefed up to handle the load. In fact, the entire circuitry is different and improved.

It defaults to on because in order for it to count for EPA standards it must be the default setting once the truck is on. If you could default it to off, then Ford couldn't take credit for it in the estimates.
