GEN 2 “Must do Mods”?

The only must do mods IMO:
Catch can, will catch majority of oil before it gets into your intake and gunks up your valves. Will help your engine perform better in the long run and possibly eliminate the need for an intake cleaning down the road.
Better set of Brake pads, with stainless steel lines. Much better feel and performance over stock.
Highly recommended mods:
Ceramic Tint if it’s hot where you live, ceramic coating at the very least, bed liner, mud flaps.
Besides that I would say just see what you need for your use of the truck as you go.

1. Disable auto stop-start (if it bothers you as much as it bothers most of us).
2. The rest is up to you.

Looking at what the OP posted, not much offroad but snow driving -

Under carriage coating - shouldn't be an issue if area doesn't salt, be aware Raptors on lots here in southern california still show signs of rust underneath so inspect carefully when you get yours

Fog lights or secondary lighting - useful for anyone, more so for poor weather areas. Shocked they don't come with stock fogs

UV Tint/coating - even the stock tinted windows aren't UV treated to my understanding so having them all done including the moonroof if you have one, cuts down on cabin heat, a must in hot areas but still useful anywhere. Can darken windows to personal taste or just do clear on any glass.

Dedicated winter tires- depends on how much snow/ice you will be going through. Don't have this issue in socal, but seems most complaining I have seen on the ko2s has been winter conditions

Bed protection- cover, liner or both. If you plan to keep stuff in the bed on a regular basis would be a good idea to secure it. Me personally if I lived in an area with snow would 100% get some kind of cover. Here in California I see a lot of trucks with bare metal beds and they are thrashed, not sure if you got a factory liner or not, if not highly recommend line-x even combined with a cover.

RECOVER GEAR KIT (not really a mod but needs to be mentioned)- *if you plan to offroad at all in any vehicle even once or twice a year this is a must!!
Hard to do a true recommendation because it varies on what type of off roading/terrain, and how far out from civilization you will be doing- bare minimum gloves, some tow straps, shackles and a decent first aid kit. If new to offroading, look into local clubs and research the areas you would hit, and be over prepared in case something happens. Start easy and learn the vehicle, also learn how to use your gear before you go.

Past all this I would say all other mods are personal taste.

Can still happen depending on how much blow by they have. Especially since our motors use both port and direct injection there isn’t as much fuel being fed through the port injection alone to keep them as clean as they should be.
My N54 has both port and direct injection, it has helped a lot, but they still get gunked up. Definitely no where near as bad, but enough that I would want a catch can.
Just my experience though, would rather play it safe.
