Last deal I got was for dealer financing at 4% but they gave me 2000 off sticker. I took it then refinanced their loan to 1.9% on my own credit union. still saved me 2k so I can play that game every time for that.

So I ordered a 2021 without the sunroof, my thought was same as yours. Ford never built my order,, so I bought one off the lot, it had a sunroof, I have to admit it is nice, I am glad to have it now. You might want to look at one at a dealer just to see.

While the 57-59k seems about right. I did have an issue trading in a few trucks years ago. I had put aftermarket wheels on them, (sold the original ones) and the dealers told me that If I had the OEM wheels, I would get more for it. I actually had that happen more than once at different dealers...
