Chunking is when pieces or "chunks" break off of your tread blocks. It is usually caused by agressive or abusive driving, on or off road. This seems to occur more in mud terrain tires. Sometimes happens to all terrain tires as well. Large tread blocks and softer tire compounds seem to contribute to the problem. I had it happen to a brand new set of Toyo MT tires during spirited off road driving. If the chunking is severe enough, it can destroy the tire, but usually it is just cosmetic  damage and the tire can continue service.
