Just to keep this updated. Fuse 27 was done by the PO, the plug wires look brand new. Would it be the 87 gas?

I use 87 gas every day, so, I doubt it. Could have been dirty gas from an odd gas station that you stopped at that just got a delivery or has old tanks.

Is the truck tuned? If it is tuned for 91 and you are running 87, that's going to be a problem.

Replace the spark plugs yet?
2nd owner so I am unsure, theres no indication it was tuned.
Not yet, may pull a few to look.

I do like how fuse 27 was done so maybe the PO was knowledgeable. Thanks to the internet and his profession, I "can" contact him but I'm not sure I "should" lol.

I would replace them. They don't last long in these trucks vs a Honda. Then retest. If it is still doing it after, throw some good 91 in it and test again.

The more I think about it, this may be something worth looking into.
