You could negotiate having a stock radiator put back in as part of the sale or right afterwards so there are no powertrain warranty issues (if no tune). Have them do the OEM grill too since it has to come off to do the radiator anyway. Lots of people have upgraded radiators and have not heard...
Total waste to buy a truck with that suspension setup and bumpers if you don't plan on ever offroading it. Obviously lots of people do it, but you could start with a brand new 2019 truck and add the cosmetic type stuff you listed to it for a lot less (and have a brand new truck).

Yes I have several friends with the 1up and having used it myself with them I can say it is very heavy duty and easy to load/unload the bikes. You don't have take any wheels off or lift them up way high. I don't think the exhaust tips will be an issue.
