Make sure your trans is at the correct temperature when you check it after changing it. I think it has to be around 197 degrees. I think that's the temperature the thermostat in the trans opens to let the fluid travel through the trans cooler. Someone correct me if I have the temps wrong.

Did you try to empty the system and put a vacum pump on it? That will get out any moisture in the system. Then fill it with the proper amount of freon. If it has too much freon it wont get really cold.
Sounds like there is air in the coolant system. Try putting the truck up on ramps or parking it facing up hill. Take the radiator cap off and run it until the top radiator hose gets hot. Make sure you have the heater on high so it runs through the heater core. That should get any air out.
